Fruit salad recipes

I would like to substitue the fruit in the salad with something else.

Does anyone know any easy to make good fruit salad recipes my 3 1/2 year old son can help me make? We are going on a picnic this weekend and thats what he wants to bring.

Anyone else have any recipes?

I love Mexican rice and beans - but the package rice and can beans are getting old. I don’t love to cook - So are there any fast easy good recipes for authenic Mexican rice and beans?
