not a lot ingredients. She has to make it for Spanish class. Can anyone help???

I’m having a potluck in my spanish class on friday, to celebrate cinco de mayo. (Yes, I know it was yesterday but it’s hard to have a fiesta on a Monday…)
Anywhooo. I need an easy but delicious recipe that I can make on Thursday night and warm up real quick on Friday morning. (I have spanish first period)
So if you know of anything PLEASE help me out. I don’t wanna bring cookies or chips like everyone else. I want to bring actual Mexican food.

im trying to find an easy mexican rice recipe, similar to what my mom made when i was growing up. I recall frying up white rice (but don’t know how long) then adding water and a tomato boullion. You can add peas and carrots if you want and then cook it. My question is: how long to fry up the rice? do i need more water once i fry it up? any help please..

I’m doing a project for my Spanish Class, and i would like to share a mexican dessert . I made flan, and that is too hard to transport, because you need to keep it cool..so I want to bake cookies for my class. I know that Mexicans arent really big on baking, and I’m having trouble finding a cookie recipe that’s actually authentic (a.k.a., its from mexico, not from the states!) So do you have any dessert recipes you could share with me?
